Mini Fro-Yo Cups

A fun, protein-packed snack that’s easy to make and perfect for warm days. Try different fruit combinations to create your own favorite flavors.

Ingredients:

  • 1 cup coconut yogurt or plain Greek yogurt
  • 2 tablespoons raw honey or pure maple syrup
  • 1 teaspoon vanilla paste or vanilla extract
  • 1 cup fresh berries (I used chopped strawberries and blueberries)
  • 1/4 mango, chopped small
  • silicone ice cube mold
  • serve over a bed of ice

Instructions:

In a small bowl, combine the yogurt, honey and vanilla. Whisk until the mixture is smooth and well blended. Transfer the mixture into a medium-small resealable plastic bag, pressing out as much air as possible before sealing.

Place pieces of fruit into each cavity of the silicone mold.

Snip a small corner from the sealed bag and gently pipe the yogurt mixture over the fruit in each mold cup.

Use the back of a fork to gently swirl the yogurt and fruit together in each cup, creating a marbled effect without fully mixing.

Freeze the filled mold for about 4 hours, or until solid.

When frozen, carefully pop the fro-yo cups out of the silicone mold. Arrange them on a platter set over a layer of ice to keep them chilled while serving.

Serve immediately and enjoy!
