Creamiest Gluten Free Cream Cheese Frosting

Yield: Makes enough to frost a 2-layer 8-inch cake
A rich, creamy gluten-free cream cheese frosting perfect for cakes, cupcakes, and cookies.
Ingredients:
- 1/4 cup unsalted butter, near room temperature (or a buttery dairy-free spread)
- 11 ounces gluten-free cream cheese, near room temperature (Philadelphia or a dairy-free alternative such as Tofutti or Daiya)
- 2 cups confectioners’ sugar, sifted, or more as needed (use a corn-free powdered sugar if required)
- 1 teaspoon fresh lemon juice, grated lemon zest (yellow peel only), or 1 teaspoon pure vanilla extract
Instructions:
- In the bowl of a stand mixer, beat the butter and cream cheese on high speed until light and fluffy.
- Sift in the confectioners’ sugar and mix on low speed until smooth and creamy. Add more sugar if you prefer a stiffer frosting for easier decorating.
- Stir in the lemon juice, zest, or vanilla extract and beat on low until fully combined. Use the frosting on cooled cakes, cupcakes, or cookies.
