These frozen fruit salads have been a family favorite for years. They’re cool, light, and more like a dessert than a typical fruit salad.
Ingredients
- 1 pint sour cream
- 1 Tbsp lemon juice
- 3/4 cup sugar
- 1/8 tsp salt
- 1/4 cup maraschino cherries, finely chopped
- 9 oz can crushed pineapple (drained)
- 2 bananas, cut into small pieces
- 1/4 cup chopped pecans (optional)
- 1/2 cup frozen raspberries, chopped
- Sweetened whipped cream, for topping
Instructions
- In a bowl, mix the crushed pineapple, chopped maraschino cherries, and banana pieces.
- Add the lemon juice and sugar; stir until the sugar dissolves.
- Fold in the sour cream and salt. Add pecans if using, then gently fold in the frozen raspberries.
- Line a 12-cup muffin pan with paper liners.
- Fill each liner to the top with the fruit mixture. Place the pan in the freezer and freeze for several hours or overnight.
- When ready to serve, remove the paper liners and top each frozen salad with sweetened whipped cream. Let sit about 10 minutes at room temperature before serving if you prefer a slightly softer texture.

I like to let the frozen salads sit for about 10 minutes before serving so they soften slightly.
