Description

These frozen fruit salads have been a family favorite for years. They’re cool, light, and more like a dessert than a typical fruit salad.


Ingredients

  • 1 pint sour cream
  • 1 Tbsp lemon juice
  • 3/4 cup sugar
  • 1/8 tsp salt
  • 1/4 cup maraschino cherries, finely chopped
  • 9 oz can crushed pineapple (drained)
  • 2 bananas, cut into small pieces
  • 1/4 cup chopped pecans (optional)
  • 1/2 cup frozen raspberries, chopped
  • Sweetened whipped cream, for topping

Instructions

  1. In a bowl, mix the crushed pineapple, chopped maraschino cherries, and banana pieces.
  2. Add the lemon juice and sugar; stir until the sugar dissolves.
  3. Fold in the sour cream and salt. Add pecans if using, then gently fold in the frozen raspberries.
  4. Line a 12-cup muffin pan with paper liners.
  5. Fill each liner to the top with the fruit mixture. Place the pan in the freezer and freeze for several hours or overnight.
  6. When ready to serve, remove the paper liners and top each frozen salad with sweetened whipped cream. Let sit about 10 minutes at room temperature before serving if you prefer a slightly softer texture.

Notes

I like to let the frozen salads sit for about 10 minutes before serving so they soften slightly.
