Ingredients
- 3 cups gnocchi (16 ounces), see shopping tips
- 1 (10 oz.) package frozen spinach, thawed
- 2 cups chicken, cooked and diced
- 1 (15 ounce) jar light Alfredo sauce, see shopping tips
- 1 cup fat-free ricotta cheese or cottage cheese
- ½ cup reduced-fat mozzarella cheese, shredded
Instructions

Cook the gnocchi according to package directions, then drain well. In a large bowl, combine the cooked gnocchi with the thawed and drained spinach, diced cooked chicken, light Alfredo sauce and the ricotta or cottage cheese. Mix gently until everything is evenly coated, then transfer the mixture to a casserole dish and spread it into an even layer.

Sprinkle the shredded reduced-fat mozzarella evenly over the top. Bake in a 400°F oven for 20–22 minutes, then switch the oven to broil for 2–3 minutes to brown the cheese. Watch closely while broiling so it doesn’t burn. Serve hot.

This casserole freezes well; cool completely before wrapping and freezing for up to 2–3 months. Thaw and reheat in the oven until warmed through.
