The ingredient list is short and straightforward. A touch of garlic paired with butter and lemon creates a comforting, homemade flavor that highlights the salmon without overpowering it.

Can you use different fish in this foil pack salmon recipe?

Yes. This foil-pack technique works well with many types of fish and even shrimp. Because fish fillets vary in thickness, adjust the cooking time: thinner fillets need less time, thicker fillets need a few extra minutes. The garlic-butter base pairs nicely with most white fish, trout, cod, halibut, or shellfish like shrimp for a quick seafood alternative.

Ingredients

  • 2 salmon filets (6-7 ounces each)
  • 2 Tablespoons butter melted
  • 3 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried or fresh thyme or oregano or mix of both
  • 1/2 teaspoon dried dill or 1 teaspoon fresh chopped dill
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 1 medium lemon cut into wedges
  • Fresh minced parsley for topping

Instructions

  • Preheat oven to 425°F. Line a baking sheet with a large sheet of aluminum foil that extends beyond the pan. Place the salmon on the foil and bring up the sides, leaving the top open for now.
  • In a bowl, whisk together melted butter, minced garlic, lemon juice, thyme or oregano, dill, salt, and pepper.
  • Pour the butter mixture over the salmon. Fold the foil to almost fully enclose the fish, leaving a small vent for steam.
  • Bake until the salmon is cooked through, about 15 minutes depending on thickness. Adjust the time to reach your preferred doneness.
  • Serve warm, topped with fresh parsley and lemon wedges.
