Ingredients
- 8 ounce package of sharp cheddar cheese, grated
- 8 ounce package of cream cheese, softened
- 2 tablespoons of grated white onion
- 2 tablespoons of mayonnaise
- 1/4 cup of crushed pecans, to mix in
- 1 cup of crushed pecans, to finish
- Couple of shakes of Tabasco (optional)
- 2 tablespoons of Worcestershire sauce
- Pinch of black pepper
- Couple pinches of paprika
- Pinch of celery salt, if needed
- Fresh rosemary for garnish
Instructions
- In a bowl, combine shredded cheddar, softened cream cheese, Worcestershire sauce, Tabasco (if using), grated onion, black pepper, paprika, celery salt (if using), mayonnaise, and 1/4 cup crushed pecans. Mix until fully combined.
- Place the remaining crushed pecans on a plate for coating.
- Use a spoon or small cookie scoop to portion about 1½-inch balls. Roll portions gently between your palms to form smooth rounds.
- Roll each ball in the crushed pecans until evenly coated, then transfer to a serving plate.
- Repeat until all mixture is shaped. Cover with plastic wrap and refrigerate for 4–6 hours or overnight to firm.
- Garnish the platter with fresh rosemary sprigs or tuck a small sprig into each cheese ball for a festive touch.
- Serve chilled on their own or with crackers.
