This cheesy, spicy, saucy—and delightfully messy—Italian sausage sandwich is a family favorite that brings back memories every time. It’s a comforting, crowd-pleasing meal that works for a simple weeknight dinner or as a hearty offering for game day and gatherings.

My dad first discovered this sandwich after he and my mom moved to St. Louis in 1977. St. Louis still has a strong Italian neighborhood known as The Hill, and nearby there was a small Italian delicatessen called Grassi’s. One of their signature items was known as The Bomb: a poor-boy style sandwich filled with lengthwise-sliced Italian sausage, pepper jack cheese and red sauce, wrapped in foil and toasted. Our home version stays true to that original idea while being easy to prepare at home.

For a family-style version I typically use two large loaves of crusty Italian bread, sliced lengthwise. Authentic, bakery-style Italian loaves give the best texture, but any sturdy crusty bread will work.

Using a homemade red sauce will elevate the sandwich—thick, well-seasoned tomato sauce melds perfectly with the sausage and cheese. If you prefer convenience, a high-quality store-bought marinara will do; just choose one with good flavor and texture.

While the sauce simmers, arrange ten Italian sausage links on a cookie sheet and bake at 350°F (175°C) for about 30 minutes, turning once, until cooked through and browned on both sides. Remove and let the sausages cool slightly before handling.

Can I use premade marinara or red sauce instead of homemade?

Yes. Choose the best-quality jarred sauce you can find. A rich, well-seasoned marinara will still deliver great results if you don’t have time to make your own.

When the sauce and sausages are done, let them rest for about 10 minutes. Slice a pound of pepper jack cheese into thick slices. Slice each sausage lengthwise, then crosswise so each link yields four pieces—this helps the sausage lay flat in the sandwich.

Place the halved loaves on a large cookie sheet, spread sauce on both cut sides, then arrange the cheese on the top halves and the sausage pieces on the bottom halves. Carefully bring the two halves together to form the loaves, then wrap the loaves tightly with foil.

Bake the wrapped loaves at 350°F (175°C) for 15–20 minutes, or until the cheese is fully melted and the sandwich is heated through. Remove foil, slice into sandwich-sized portions with a serrated bread knife, and serve. For a main course, pair the sandwiches with a crisp Italian salad; for parties, cut into narrower strips for easy finger food.

  • 2 large loaves of crusty Italian bread, sliced lengthwise
  • Recipe-quality red sauce or good-quality marinara (homemade preferred)
  • 10 Italian sausage links
  • 1 pound pepper jack cheese, sliced thick

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare your red sauce (homemade or jarred) and keep warm.
  3. Arrange sausage links on a baking sheet and bake for 30 minutes, turning once, until browned and cooked through. Let cool slightly.
  4. Slice each sausage link lengthwise then crosswise to make four pieces per link.
