Ingredients 

  • 2 tablespoons olive oil
  • 3 medium carrots, diced
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 8 cups gluten free chicken broth
  • 1 whole gluten free rotisserie chicken, skin and bones removed and shredded or chopped
  • 2 bay leaves
  • 6 slices nitrate free bacon
  • 1 pound mushrooms, cleaned and sliced
  • 4 green onions – white and green parts, chopped
  • Kosher salt
  • Black pepper
  • cups gluten free flour blend
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • teaspoons sugar
  • 2 tablespoons butter or dairy free butter substitute, melted
  • 1 cup more or less buttermilk or dairy free buttermilk substitute*

Instructions 

  • Heat olive oil in a large soup pot or Dutch oven over medium-high. Add the diced carrots and onion and cook until softened, about 5 minutes. Stir in the garlic and cook 30 seconds more. Add the chicken broth, shredded chicken, and bay leaves, then bring to a gentle boil. Reduce heat and simmer for 15 minutes.
  • While the soup simmers, chop the bacon into ½-inch pieces and cook in a skillet over medium heat until crispy. Remove bacon with a slotted spoon. Add the mushrooms to the skillet, raise heat to medium-high, and brown the mushrooms, about 8 minutes. Return the bacon to the pan, stir in the chopped green onions, season with salt and pepper, and set aside for serving.
  • In a mixing bowl, whisk together the gluten-free flour blend, baking powder, baking soda, ¾ teaspoon salt, and sugar. Stir in the melted butter. Add buttermilk starting with about ¾ cup, then add more a little at a time until the mixture forms a soft dough.
  • Drop tablespoon-sized portions of the dough onto the simmering soup. Cover the pot and let the dumplings cook for 15 minutes without lifting the lid.
