Savory Apple and Chicken Dinner Recipe for Weeknight Meals

That’s how this Apple Chicken dinner was born—one evening I had limited supplies and needed a quick, healthy meal. Three years later it’s a family favorite. It’s simple, wholesome, and allergy-friendly: gluten-free, dairy-free, and also free from eggs, soy, and nuts for those with additional restrictions.

This dish uses only four main ingredients and takes about 35 minutes from start to finish, making it perfect for busy weeknights.

Gluten Free Apple Chicken Dinner

This simple gluten-free dinner uses just four ingredients and is easy to prepare.

Ingredients

  • 1
    lb
    organic skinless
    boneless chicken breasts
  • 3
    organic Fuji apples
  • 1.5
    cups
    organic
    low sodium gluten-free chicken broth
  • 1
    tsp
    olive oil

Instructions

  1. Heat the olive oil in a medium skillet over medium heat.
  2. Add the chicken and sear, turning every 1–2 minutes until the outside turns white (do not brown).
  3. While the chicken sears, peel the apples and cut them into cubes.
  4. Once the chicken is seared on all sides, add the chicken broth and the cubed apples to the skillet.
  5. Reduce the heat to low and cover the skillet.
  6. Simmer for about 30 minutes, until the chicken and apples are fork-tender and the chicken is fully cooked.
  7. Remove from heat.
  8. Serve the cooked apples as they are, or pulse them a few times in a food processor for a chunky apple salsa.
  9. For children, shred the chicken; for adults, leave pieces whole and spoon apple salsa and a little cooking broth over the top for added flavor.
  10. Enjoy!
