These watermelon margarita popsicles are naturally sweet, refreshing, and made with no added sugar—ideal for a hot summer day.

With just four ingredients—watermelon, silver tequila, lime juice, and a pinch of salt—these adult popsicles are simple to prepare and full of fresh flavor.
Their natural gradient looks beautiful once frozen. If you use fresh watermelon juice, you’ll notice the pink pulp separates slightly from the water, creating a pretty layered effect in the molds.

Watermelon is my favorite fruit. When choosing one, look for a large, creamy yellow spot on the rind—that sun-kissed patch usually means the melon is ripe and sweet.
I once bought an 11-pound watermelon and only used a fraction for this recipe. The leftover fruit was a welcome problem to have—melon for days!

Ingredients
- 1 small (about 5-6 pounds) watermelon cut into pieces
- Juice of 1 lime
- 4 ounces silver tequila
- 1/4 tsp (or to taste) sea salt
Instructions

Cut the watermelon into pieces and discard the rind. Place the fruit in a blender and blend until smooth.

Add the lime juice, tequila, and sea salt to the blender and blend briefly to combine.

Pour the mixture into your popsicle molds, leaving a little room at the top because the liquid will expand as it freezes. Freeze for about 2–2.5 hours, then insert sticks and return to the freezer for another 3–4 hours until fully set.

To remove popsicles, briefly submerge the mold’s exterior in warm water for a few seconds. The popsicles should release easily. Store extras in a zip-top bag in the freezer.
Notes
- You may have a bit of extra juice depending on the size and juiciness of your melon. Extra watermelon is always welcome.
- If you prefer, skip the salt, though a small amount enhances the margarita flavor without overwhelming the popsicles.
- If your watermelon is full of seeds, you can strain the blended juice, but it’s usually unnecessary—many prefer the texture and color the small bits add.
