- 2 large white onions
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 ounces cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/2 teaspoon granulated garlic

- 1/2 teaspoon dried oregano

Step by Step Instructions

- Trim the ends of whole onions so they sit flat. Slice each onion in half and carefully remove the inner layers, leaving about 2–3 outer layers to form a sturdy shell. Place a small onion slice into the bottom of each shell to help hold the filling.
- Slice the removed onion centers and sauté them in butter over medium heat, stirring often until they are deeply caramelized and sweet.
- Transfer the caramelized onions to a bowl. Add the softened cream cheese, shredded mozzarella, granulated garlic, thyme, oregano, basil, salt, and pepper. Mix until the filling is smooth and well combined.

- Lightly brush or spray the inside and outside of each onion shell with olive oil to prevent sticking and to encourage browning.
- Spoon the cheese-and-onion mixture into each shell, pressing gently so the filling rests snugly inside.

- Place the stuffed onions on the grill over indirect heat with the lid closed. Maintain a grill temperature around 325–350°F (160–175°C) and cook for about 15–20 minutes, until the onion shells are lightly browned and the filling is hot and melty.
- Remove the onions to a serving platter, garnish with chopped fresh parsley if desired, and serve immediately.
How to Store and Reheat
Store any leftovers in an airtight container in the refrigerator for up to 3–4 days.
To reheat: warm in an air fryer at 350°F for 3–5 minutes, or on a baking sheet in a 350°F oven for about 8–10 minutes, until heated through.
