Mint Oreo Fudge Brownies
Mint and chocolate are a classic pairing—just as iconic as chocolate with peanut butter or chocolate with hazelnut. The deep chocolate notes balanced with bright mint make these brownies irresistible. With St. Patrick’s Day or any mint-craving moment approaching, these bars are perfect to bake and share.
After finding a package of mint Oreos, I adapted my popular Oreo Fudge Brownies and gave them a minty makeover. The result: three indulgent layers of mint and chocolate that combine texture and flavor in every bite.

Three Layers in These Brownies
These bars are built from three distinct layers:
- Mint Oreo Brownies: a dense, fudgy brownie batter flavored with mint and layered with mint Oreos.
- Mint Cookies-and-Cream Fudge: a simple white chocolate fudge flavored with mint, lightly tinted green and studded with chopped Oreo pieces.
- Mint Chocolate Ganache: a silky dark-chocolate ganache with a touch of mint extract to finish the bars.

Fudgy Mint Oreo Brownies
The base is a chewy, fudgy brownie with a shiny crackly top. Start by melting bittersweet chocolate and butter together over simmering water. Once melted, whisk in both granulated and light brown sugar; the combination helps create a moist, chewy texture.
Flavor the batter with pure mint extract, then fold in a small amount of flour, sifted cocoa powder for extra chocolate depth, and a pinch of salt. I use less than a cup of flour to keep the brownies dense and fudgy.
Baker’s Tip: Line the pan with foil or parchment and leave an overhang so you can lift the whole slab out easily once chilled.

For extra texture and Oreo flavor, press a layer of mint Oreos into the brownie batter before finishing the top layer. If mint Oreos aren’t available, substitute regular Oreos or another mint cookie, or skip them altogether—the brownies will still be delicious.

Mint Cookies-and-Cream Fudge
The middle layer is an easy white chocolate fudge made with sweetened condensed milk and white chocolate chips. Gently melt the condensed milk and white chocolate together over simmering water, then stir in mint extract and optional green food coloring for a festive hue.
Fold in chopped mint Oreos so every spoonful of fudge has crunchy cookie pieces. The fudge will be thick—spread it over the cooled brownie layer and chill until set before adding the ganache.

Mint Chocolate Ganache Topping
For the topping I prefer a mint-infused ganache. It’s softer and glossier than melted chocolate, and adding mint extract to ganache is easier than adding flavor to plain melted chocolate without risking seizing.
To make it, heat heavy cream until just simmering, then pour it over dark chocolate chips and a small amount of mint extract. Stir slowly until smooth and glossy. Dark chocolate works well here, as it balances the sweet white fudge and rich brownies.

After the ganache firms in the refrigerator, lift the layered slab from the pan and slice with a hot knife for cleaner edges. These bars are large and rich—serve at room temperature for the best texture, or cut into halves if you prefer smaller portions.

With a brownie base, a cookies-and-cream fudge center and a glossy chocolate topping, these bars taste like three desserts in one. Each layer is straightforward to prepare, and together they create a minty, chocolatey treat worth sharing. Enjoy!

Fudgy mint brownies layered with mint Oreo cookies, a creamy mint white-chocolate fudge, and a smooth mint chocolate ganache.
Ingredients
Mint Oreo Brownies:
- 6 oz bittersweet chocolate (70%), chopped
- ¾ cup unsalted butter, cubed
- ¾ cup granulated sugar
- ½ cup light brown sugar, packed
- 2 large eggs, room temperature
- 1 large egg yolk
- 1 teaspoon pure mint extract
- ¾ cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder, sifted
- ¼ teaspoon salt
- 16 Mint Oreos
Mint Oreo Fudge:
- 1 and ¼ cup (14 oz) sweetened condensed milk
- 3 cups white chocolate chips
- 1 teaspoon pure mint extract
- Few drops green gel food coloring (optional)
- 15 Mint Oreos, roughly chopped
Mint Chocolate Ganache:
- 1 cup dark chocolate chips
- ½ cup heavy cream
- ½ teaspoon mint extract
Instructions
For the Mint Oreo Brownies:
- Preheat oven to 350°F (325°F for dark non-stick pans). Line a 9×9-inch baking pan with foil or parchment, leaving a 2-inch overhang. Spray with non-stick spray.
- Place chopped chocolate and cubed butter in a heatproof bowl over simmering water. Stir until melted and combined, about 3–4 minutes.
- Remove from heat and whisk in both sugars until dissolved. Let warm slightly so eggs won’t curdle when added.
- Whisk in eggs, egg yolk and mint extract until combined. Fold in flour, cocoa and salt until just blended.
- Pour half the batter into the prepared pan; arrange Oreos in a single layer. Spread remaining batter over the Oreos. Bake 25–30 minutes, until a toothpick shows a few moist crumbs. Cool completely in the pan.
For the Mint Oreo Fudge:
- In a medium heatproof bowl over simmering water, melt sweetened condensed milk and white chocolate chips, stirring until smooth. Remove from heat and stir in mint extract and optional food coloring. Fold in chopped Oreos.
- Spread the fudge over the cooled brownies and refrigerate until set, about 2 hours.
For the Mint Chocolate Ganache:
- Heat heavy cream until simmering. Pour over dark chocolate chips and add mint extract. Let sit a minute, then stir slowly until smooth and glossy.
- Pour ganache over the fudge layer and smooth. Refrigerate 20–25 minutes to set.
- Lift the slab from the pan using the foil overhang and slice into bars. Serve at room temperature for best texture.

- Storage: Store bars at room temperature up to 1 week, or refrigerated up to 2 weeks.
