- 1 egg beaten with 1 tablespoon of water, for egg wash
- 4 ounces goat cheese at room temperature, plus more for garnishing
- 4 ounces cream cheese at room temperature
- 1 tablespoon honey, plus more for drizzling
- 1 teaspoon fresh thyme, chopped plus more for garnishing
- 2 ripe pears, thinly sliced

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the cream cheese and goat cheese until smooth. Stir in the honey and chopped thyme until fully combined.

Roll the sheet of puff pastry on a lightly floured surface. Lightly flatten with a rolling pin to smooth fold lines. Fold over the edges and crimp with a fork to form a border.
