Tips for This Week’s Meal Plan
- Cook extra rice on Sunday and reserve portions for Tuesday’s dinner to save time.
- Shred a little cabbage on Sunday to top the chicken, and save the rest for the bratwurst sheet pan meal.
- To make cilantro-lime rice from leftover rice: add 1 tablespoon of water per 2–3 cups of rice, warm gently in a heat-safe dish covered with a damp paper towel, then stir in the zest and juice of one lime, a pinch of salt, and about 1/4 cup minced cilantro.
- Use leftover chicken, sweet potatoes, rice, or chili to assemble burritos for Friday’s dinner and lunches.
