History of French Onion Soup
French onion soup traces back to Paris in the 18th century. One popular story tells of King Louis XV returning from a long hunt with very little in the pantry—only onions, butter and champagne. He combined what he had and created a dish that became a staple. That happy accident gave us a lasting classic.

Adapting a Classic
I wanted the rich flavors of French onion soup but also wanted to use a beautiful cut of steak and some fresh mushrooms I had on hand. The result is a hearty Steak and Mushrooms Soup adapted for the Instant Pot. It keeps the deep, caramelized onion notes while adding meat and mushrooms for a satisfying meal.

Steak and Mushrooms Soup is Easy
This soup comes together in a few straightforward steps:
- Trim and cut the sirloin into bite-sized pieces.
- Heat olive oil and sear the steak.
- Add onions, mushrooms, broth, wine and seasonings.
- Pressure cook, release, and let rest briefly.
Serve with crusty bread or crackers for dipping and garnish with chopped green onions if desired.

Ingredients
- 1.5 pounds Sirloin steak
- 2 tablespoons Olive oil
- 32 ounces Beef stock
- 1 large Onion, chopped
- 8 ounces Baby Bella mushrooms, sliced
- ½ cup Red wine or sherry
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Salt
- ½ teaspoon Ground pepper
Instructions

Trim excess fat from the steak and discard. Cut the steak into bite-sized pieces.

Select the Sauté function on the Instant Pot. Add the olive oil and, once hot (about 1–2 minutes), add the steak pieces. Sear the edges, turning so each side is browned, about 4–5 minutes total.

Press Cancel to stop Sauté mode.

Add the chopped onion, sliced mushrooms, beef stock, red wine or sherry, Worcestershire sauce, salt and pepper. Stir to combine. Check that the lid seal is in place and the vent is clear, then place the lid on and set the valve to Sealing.

Select Manual (High) pressure and set for 15 minutes. Allow a natural pressure release for 10 minutes, then perform a quick release for any remaining pressure. Total cook time, including pressurizing, will be about 30 minutes.

Remove the lid and let the soup rest 5 minutes. Serve 8 portions, garnished with chopped green onions if desired. Offer toasted bread, crackers or a fresh side salad for a fuller meal.
